linguine

I know I have not written in quite literally forever but I decided that this new year I would get back into the game. I am not able to cook at college but I do try new places. I am home for break and have been able to actually cook for myself. Today I tried a new meal that is almost identical to linguine you get at fancy restaurants. It is so simple and so easy to make that you will have no troubles. This recipe also takes under 20 minutes so it is quick for lunch or for nights where you are too tired to do anything. I attempt to use all fresh ingredients but I mainly just used what I had on hand.

Ingredients

  • handful of spinach
  • can of petite cut tomatoes
  • can of chicken breast (optional)
  • angel hair pasta
  • minced garlic
  • onion powder
  • red pepper flakes
  • three slices of red onion
  • extra virgin olive oil

Instructions

  1. Boil water in a pot then add the pasta. You can choose to add as much or as little as possible, I prefer a large handful of pasta because I am a pasta lover.
  2. Add oil to a different pan and add the chopped onion. Onions take a little longer to cook so we add them first. Next, add in the can of tomatoes. These need to cook for about 3 minutes or until soft before adding in the spinach.
  3. Once the onions and tomatoes are soft and boiled down, add in the handful of spinach. Make sure you washed off the spinach before hand to make sure it is nice and clean.
  4. Next, once the noodles are soft and brought to a perfect boil drain out their water and add them to the pan of vegetables. Place the garlic, onion powder, and pepper flakes to the mixture. You should do three shakes of each into the pasta and vegetables.
  5. Lastly, this step is optional- place in a bowl and put fresh shaved parmesan cheese on top when it is still steaming that way it melts on the pasta. Stir and enjoy!

smoothie lovers

Calling all vegan animal loving smoothie lovers!! I have been craving refreshment after working in the hot sun all day everyday so I cooked up a new favorite meal. This is like a banana berry smoothie I guess you could call it? It takes all of 5 minutes to make and tastes like heaven in a cup (or bowl?) To start off, we need some key ingredients. You need about

  • 1/2 cup of almond milk
  • one cup of berries (strawberries, blackberries, etc.)
  • one whole frozen banana
  • one package Strawberry Cheesecake greek yogurt (or any flavor you choose)

These are just a few of my favorites but you can obviously pick and choose what milk or what yogurt flavor yada yada you want in yours. I prefer my berries to be frozen but sometimes I only have fresh ones on hand and that is perfectly okay too! I mix all of these ingredients in my ninja blender until they are all soft and smooth. You never want any random chunks of banana floating around or huge seeds in every bite. I then pour this into an 10-12 oz cup. Sometimes it doesnt fill it all the way up and sometimes I never really know hahaha. This part is my favorite : toppings!!!!! I drizzle mine with fresh organic honey, a goos pinch of chia seeds, and my FAVORITE nut butter: raw natural creamy almond butter. I could eat this smoothie for every meal and never get sick of it because of how yummy every flavor mixes together and the tastes all mash so well. The chia seeds and the almond butter make you feel more full after you eat it as well as the yogurt. Its an amazing meal replacement smoothie or even just a snack for your everyday life. You can take it to go to school to work to the pool any where your heart desires. I hope you enjoy this smoothie as much as I do and try it out! Don’t get too addicted 🙂

steak steak steak

Oh Baby do I love some steak! This is one of my favorite meals in the entire world. No lie. For dinner last night I was craving some nice grilled steak and thats exactly what I made. We bought frozen miniature prime ribs from Sam’s, I defrosted them and marinated them. The only two seasonings/sauces I used were “grill masters Montreal steak” and Worcestershire sauce. I let them sit for maybe 5 minutes while the grill is heating to its max capacity. I them turn off the left outside flame and place the steaks on the grill. I let them sear on each side until they are decently crisp. I don’t like the outside completely burned but I do like a nice charcoal mark. It leaves a juicy finish to the steaks and it tastes like absolute heaven. I also just steamed some broccoli per usual. And last but not least. My very favorite. THE GARLIC BREAD. This cheesy delicious garlic LOW CARB bread is heaven in a bite. I can’t compliment this enough, it was absolutely the best alternative for bread. I will attempt to link the recipe below (but I am a little behind at this) but you can find it on Pinterest or even instagram! It was amazing, if you can’t tell. This dinner is a new home favorite of mine and I will be cooking it as much as possible. Let me know if you try this recipe out or if you have any questions!

PORK CHOPS

I know I know I am terrible. I have not written in ages! But today I am sharing my very first recipe. Woop Woop! All my family member and all my friends know I am notorious for my pork chops. I love to grill them, sizzle them, and even slow down and cook them on the stove top. Today, I tell you how to cook them on the stove top. Easy peezy. First, I marinate my chops in a different arrangement of dry seasonings including (but not limited to) Cayenne pepper, cajun seasonings, and salt & pepper for taste. You can always add whatever flavors you like but these are a couple of my favorites. Jamaiican jerk is also a really tasty option. I then turn on the stove and let the pan warm up will olive oil for about 30 sec- 1 minute. I then place the pork chops on the pan and let them sear on high heat on both sides to get them a little browned. I then turn down the heat to low and place a lid on it to let them conceal all of their juices. They should cook about five minutes – if maybe more on each side. Then, cut open to check if all white. I then boil up some broccoli the side to feel like a steakhouse meal. This is one of my favorite recipes and I cook it probably once a week. If you try it out, PLEASE let me know!!! a birthday brunch…

Today was my fabulous nana’s birthday whom I love so much I decided to take her out to brunch. It was pretty much breakfast but brunch sounds fancier and cooler. We wanted to go somewhere that we both had never been before so we could broaden our horizon. There is this very little fresh produce market in North Little Rock called BJ’s and it has a market and cafe connected to it so we decided to check it out. OMG!!!! It was amazing!! My order consisted of an omelet with mushrooms, ham, and cheddar cheese. This omelet came with a side of hash browns AND biscuits and gravy. Thats a lot of food if you ask me! The omelet was about as big as my face. No joke. Huge. I ate every last bit of my meal, no crumbles, whoops? My overall impression of the meal was a 9/10. The hash browns could have been a little more done because it felt a little raw but with a little ketchup, salt, and pepper the potatoes were delish. The biscuit was perfectly cooked. Super soft but the outside was thick and crispy which was perfect for the thick yummy gravy that I poured on top! The omelet itself was super fluffy and the eggs were cooked exactly correct. They were all the way done and there was no little yokes floating around anywhere. The amount of mushrooms and ham put inside were just enough to where it didn’t feel like you were eating straight egg. Overall, I recommend trying this little cafe anytime of day! It was well worth it and I will be going back! Super scrumptious.

Hello everyone!

Everyone who knows me knows I am passionate about food. Nothing makes me happier and I truly do believe I am in love with it. (lol joking). In this blog I will be taking y’all into my different recipes and my different restaurants I experience all around the world and in my very own backyard.
